The common animal derived fining agents

  • Gelatin: made from boiled animal bones, skin, and connective tissue, used in both wine and beer clarification
  • Egg albumin: dried egg whites, traditionally used in fining certain red wines, particularly in Bordeaux style production
  • Casein: a milk protein used to remove excess tannins and browning compounds, particularly in white wine production
  • Chitin: derived from crustacean shells, occasionally used as an alternative to isinglass in some wine and beer production

Why this doesn't show up on the label

The reason most drinkers have no idea their favorite wine or beer might involve animal products traces back to how fining agents function. Because they are used purely as a processing aid and bind with the particles they are removing rather than remaining in the finished product, most food labeling regulations do not require them to be disclosed as ingredients, since technically very little to none of the fining agent itself ends up in what you actually drink. E Numbers and Additives: Which Ones Are Animal, Which Ones Are Not

Additive codes look like a wall of noise, which is exactly why they are worth learning. Only a handful are animal-derived, another handful are genuinely ambiguous, and the rest of the wall is minerals, acids, and seaweed. Once you know which is which, a European label becomes faster to read than an American one.

The system, briefly

E numbers are the European Union's approved-additive codes, and the same substances appear on US labels under their names rather than a code. The number tells you the function: 100s are colours, 200s preservatives, 300s antioxidants and acidity regulators, 400s thickeners and emulsifiers, 500s acidity regulators and anti-caking agents, 600s flavour enhancers, 900s glazing agents and sweeteners, 1000s and above miscellaneous.

Being approved says nothing about the source. The same emulsifier code can cover a plant version and an animal version.

E471 is by far the one you will meet most often, because it is in a huge share of bread, ice cream, margarine, and biscuits. Most European supply is plant-derived, and many manufacturers will confirm it in an email, but the label alone cannot tell you.

Fine, despite the reputation

  • E100 curcumin, E160a carotenes, E160b annatto, E160c paprika extract, E162 beetroot red, E163 anthocyanins. Plant pigments, and the usual alternatives to carmine.
  • E101 riboflavin. Produced by fermentation.
  • E406 agar, E407 carrageenan, E440 pectin, E410 locust bean gum, E412 guar gum, E415 xanthan gum, E418 gellan gum. Seaweed, fruit, seed, and microbial thickeners.
  • E300 ascorbic acid, E330 citric acid, E270 lactic acid. All produced industrially. Lactic acid is named for milk but is normally fermented from corn or beet sugar.
  • E170 calcium carbonate, E500 sodium bicarbonate, E336 potassium tartrate. Mineral salts.
  • E621 monosodium glutamate. Fermented, and vegan. The health folklore around it is a separate and largely unsupported story.

The processing aids that never appear

A processing aid is used during manufacture but is not an ingredient in the finished product, so it need not be declared. Three matter here:

  • Isinglass, gelatin, casein, and egg white in drinks. Used to clarify beer, wine, and cider. This is why a bottle can be entirely plant-based in ingredients and still not be vegan, and why third-party vegan marks on alcohol are genuinely useful rather than decorative.
  • Bone char in cane sugar. A filter medium in some US refineries. Beet sugar and organic cane sugar avoid it.
  • Animal-derived enzymes in cheese and baked goods. Often listed simply as "enzymes".

How to use this without carrying a table around

Why the same product differs between countries

A brand you trust at home can be formulated differently abroad, and this catches out travellers constantly. Three reasons:

  • Different approved additive lists. Some colours and emulsifiers permitted in one jurisdiction are not permitted in another, so the manufacturer substitutes.
  • Local supply chains. The same E number can be sourced from palm oil at one plant and from tallow at another, purely on cost and availability.
  • Different labelling rules. The EU requires E numbers or names for additives and requires allergens to be emphasised in the ingredients list itself; the US uses names and a separate "contains" statement. Neither system requires disclosure of processing aids.

The practical consequence is that a product being vegan in one country tells you very little about the same product in another, and that a vegan certification mark applies to the specific market it was issued in.

When the label genuinely cannot answer it

For ambiguous additives, emailing the manufacturer works far more often than people expect. Ask a specific question - "is the mono- and diglycerides in product X of plant or animal origin?" - rather than "is this vegan?", for exactly the same reason it works better with a server in a restaurant.
